An easy 10 minute recipe!! I didn't know how keen I would be on eating raw pepper, but we used extra jalapeño and I really loved that it was super spicy (and delicious). This recipe serves 2 and comes from The Everything Raw Food Recipe Book:
INGREDIENTS:
* 2 red bell peppers
* 1/2 cup pecans OR macadamia OR cashews
* 1/4 cup sesame seeds
* 1/4 cup chopped red or white onion
* 1 Tbsp lime juice
* 1/2 Tbsp chopped jalapeño pepper
* 1/4 tsp salt
* 1/2 tsp Mexican seasoning
* 1/2 cup avocado
* 2 Tbsp cilantro
DIRECTIONS:
* Cut the red bell peppers in half and remove stems and seeds
* In blender (or food processor) add pecans, sesame seeds, onion, lime juice, jalapeño, salt and Mexican seasoning - we also added a little avocado to this -
* Fill each red bell pepper half full with prepared mixture and garnish with avocado slices and cilantro.
